The Cookie Pirate is a Katy, Texas based home baker who specializes in custom shortbread cookies (because she likes them the best!). The two pirates met over 15 years ago while working together and became fast friends over their love of sweets and sarcasm. Alas, their career paths diverged until our Cookie Pirate adventure set sail in 2013.
Karen Neely - The Cookie Pirate
As the company namesake, Karen is responsible for baking and creative design. She started her cookie baking as a hobby, realizing that she could make an entire batch of cookies for the price of one grocery store decorated cookie that her sons demanded. As she honed her skills and steady hand, she began accepting orders from family and friends. Demand grew and so did her Cookie Pirate persona. Now Karen works with clients to create cookies to match any event or theme. In her spare time, Karen is a wife, mother of 2 sons, and Houston Texans football fan.
Jessica Neikirk - Chief Marketing Pirate
Jessica joined The Cookie Pirate after Karen asked for her opinion on a business card design, and Jessica sent back a 2 page e-mail of ideas including the company name. With 15 years of corporate marketing and public relations experience, The Cookie Pirate allows Jessica to stretch her creative mind and occasionally taste test cookies. When she's not asking Karen for free samples, she enjoys spending time with her husband and their young son, reading Stephen King novels, and volunteering.
As a home baker in Texas (i.e. a 'cottage baker') The Cookie Pirate is governed by a specific set of laws which you can view here: http://texascottagefoodlaw.com
The Cookie Pirate has had a food handler's certificate since October 2012.
